Helder~Herdwyck Farm seeks a restaurants with a Chef who shares an appreciation for American Family Farms, unique heritage breeds of livestock, and local sustainable production. We seek Chefs who value a farm's positive contribution to its community not only to the local food chain, but to the environment. We seek Chefs who share the excitement in the uniqueness and surprising flavor, as well as the nutritional value our meats provide. Our meats are an art of nature, slow grown, and created by working in harmony with the environment. The following meats are available wholesale by order. Please note, our Holistic Management farm practices mean our animals are carefully researched, selected and raised personally by us and are naturally, sustainably and humanely grown. We do NOT feed hormones, steroids or antibiotics. We do NOT feed grocery store or expired bakery waste.
Our livestock are pastured raised as part of our multi-species intensive rotational grazing program, spring to late fall (until Christmas the last several years). Even after pasturing season, our animals have full access to the outdoors in roomy paddocks and can do as they wish. Quantity is limited and will vary by season and availability. Please call for current pricing, as this will vary by season and is subject to change without notice. Several breeds we raise are listed on the Slow Foods USA Ark of Taste, and one on the U.K. Ark of Taste.

Herdwick Bred Lamb - 100% grass/forage fed. REDUCED!! Now $9.00/lb whole. Delivery additional. Our premium product, our Herdwick lamb is listed on the U.K. Ark of Taste. A new breed of sheep in the United States, it is extremely rare and not raised anywhere else in the unique manner that we do. Seasonal availability. Native to the Lake District of Cumbria, UK, it is prized by Queen Elizabeth and was served at her Coronation Luncheon. Our sheep are at the spine of our regenerative farming practices. High meat to bone ratio, customers will make reservations for this dish, not just a table and time. Use this product to increase sales in the slow time of winter, due to its unique story, excellent flavor and seasonal availability. "Best lamb I've ever tasted" - previous chef. We are the only farm in the Americas offering this meat to restaurants. Be the only restaurant serving Herdwick lamb in the country!
Herdwick Bred Mutton - $8.00 per lb hanging when available, plus processing and delivery, 100% grassfed until and after breeding age. May be supplemented during breeding age with organic grain at breeding season only.
Heritage-Breed Pork - $4.00/lb unless otherwise indicated; pastured and supplemented with non-GMO local grains as available - price is for hanging weight and includes processing - delivery additional*.
Hereford - $4.00/lb ~ slightly darker, more marbled meat than "standard" pork, often up to 30% higher meat to bone ratio than other breeds (better than Berkshire!)
Mulefoot & Mulefoot cross - $4.50/lb, our most rare, unique meat, it is listed on Slow Food USA's Ark of Taste. It is dark, like beef, well marbled unique flavor
Tamworth & Tamworth crosses - $4.00/lb
Red Wattle/Berkshire Cross - $4.00/lb
Heritage Chickens - non-GMO, for Grilling, Broiling or Roasting - $4.50/lb minimum order of 10 required - similar to white cornish cross, but way more flavor.
Stew Hens for soups or stews - $3.00/lb, availability varies
Pastured Guinea-hen - average 3lb dressed - $7.00/lb, minimum order of 10 required (neck attached)
Gizzards, livers, hearts, necks and feet available with your order. We occasionally have extras available.
